Fluffy Home-Made Pancakes
What spells Sunday morning better than a breakfast of a pile of fluffy, soft pancakes? Make pancakes as airy, light and perfect as your neighbourhood American diner in a matter of minutes. The recipe would remain more or less the same as any pancake recipe, except for a few grandma style tips and tricks. Just follow the simple steps.
Preparation time: 10 minutes
Cooking time: 5 minutes
Yields 4 pancakes
Ingredients
1 cup flour
1 tablespoon sugar
1 1/2 teaspoon baking powder
1/2 teaspoon salt
1 egg
3/4 cup milk
1 1/2 teaspoon butter-melted
In a bowl mix all the dry ingredients. Mix all the wet ingredients, leaving the egg white for the end, once all other ingredients have been mixed well. This will give you a thick batter, which is the way you want it, unless you want to end up with something half way between crepes and pancakes!
On a non-stick pan ( or a normal pan with a bit of butter) on medium to high heat, use a half a ladle-full of batter for each pancake. When bubbles start to form on the surface, its time to flip the pancake.
Tips and tricks for fluffier pancakes:
Separate the egg white from the yolk. Beat them separately. Beat the egg white until it turns to white creamy snow. Once the batter is mixed and ready, add the egg white and mix slowly.
You can substitute 1/4 cup of the milk with sparkling water for extra fluffy and soft pancakes!
The oldie but goodie- sift the flour before you add it to the bowl
You can substitute 1/2 tablespoon of sugar with vanilla sugar for a vanilla flavour in your pancakes
